CREAMY MANDARIN RICE SALAD
"Perfect with poultry, pork, or ham."
3 cups cool cooked rice 1 (16 ounce) can Mandarin orange segments, drained 1 1/2 cups thinly sliced celery 1/2 cup diced green bell pepper 3/4 cup sour cream 1 tablespoon lemon juice 1 teaspoon each seasoned salt and seasoned pepper salad greens (optional, for serving) sliced almonds (optional, for serving)
Stir all ingredients thoroughly. Chill.
Serve on salad greens and sprinkle with sliced almonds, if desired.
