Recipe(tried): Lemon Butter Snow Bars

these are excellent!!!

LEMON-BUTTER SNOWBARS

350 degrees

Crust
1-1/3 cups unbleached flour
1/4 cup sugar
1/2 cup butter softened

In small mixer bowl, combine all ingredients.
Beat at low spped, scarping bowel often, until mixture is crumbly, about 2 to 3 minutes.
Press on bottom of ungreased 8" square baking pan.
If you have hot hands, put a plastic bag over your hands and press.
Bake 15 to 20 minutes until edges are LIGHTLY BROWNED - my first time I browned too much, so watch. Also
if you use glass instead of metal lower temp by 25 degrees to 325.
Make filling while crust is cooking.

Filling

3/4 cup sugar
2 eggs
2 tabs unbleached flour
1/4 tsp baking powder
3 Tabs lemon juice - I also add a little lemon zest
powderd sugar for sprinkling

In small mixer bowl combine sugar, eggs, flour, baking powder and lemon juice.
Beat at low speed, scraping bowl often, until well mixed, 1 to 2 minutes.
I actually do not clean out the bowl from the crust but it is scraped clean before I put the filling in it.
Pour over the HOT crust.

Continue baking for 18 to 20 minutes, or until filling is set.

Sprinkle with powdered sugar; cool completely. Cut into 18 bars.

If you want it to have a chess texture/look, substitute corn meal for the flour in the filling.

350 degrees 18 - 20 minutes
