Missouri Upside Down Cake
3 Tbs. butter or margarine
3/4 c. brown sugar
2 cooking apples, peeled & sliced
1/4 tsp. cinnamon
1/3 c. shortening
1/3 c. sugar
2 eggs
1 tsp vanilla
1 1/2 c. flour
2 tsp baking powder
1/2 tsp salt
2/3 c. milk
Melt butter in 9 inch round pan. Add brown sugar and stir until melted. Arrange sliced apples on sugar/butter mixture. Sprinkle cinnamon over apples.
ream shortening and sugar. Blend in eggs and vanilla, beating thoroughly. Add dry ingredients alternately with milk. Pour over apples in pan. Bake at 350 for 40 to 45 minutes, or until done. Turn out onto serving plate immediately.
Serve with whipped cream. (Our family favorite is cinnamon ice cream when it is available.)
Makes 6 to 8 servings.
