BEEF-RICE CASSEROLE
1 c. Minute rice
2 c. water
1 lb. ground beef, cooked and
drained
salt and pepper
1/3 c. catsup
1 to 2 Tbsp. chopped onion
1 (1 lb.) can green beans,
drained
garlic salt
1 can mushroom soup
2 diced tomatoes or 1 can
drained tomatoes**
**If using canned tomatoes, you can use the juice in
place of 1 cup water.
Use a deep, greased casserole. Add these ingredients in
order given: rice, water, beef, salt and pepper, catsup,
onion, green beans, garlic salt, mushroom soup and tomatoes.
Do not stir. Bake 40 minutes at 400 degrees with lid ajar.
Note: This is also good made in a skillet stirred
together on top of the stove, only cut down 1 cup of water if
using 1 can of tomatoes and juice. Simmer slowly until rice is
done.
