Recipe(tried): Dinner Dish Ideas
Menus Hi Denise - I'm glad the Chicken Marbella turned out so well -- it's one of my favorite recipes, too. Here are a few recipes that you also might want to consider for upcoming dinners. It's difficult to know other people's tastes and what you might be able to get at your local stores, but I hope you find something that you can fix for your date.
If you like meat and pasta in red sauce, I can't recommend this recipe enough - please use the search feature (at the top of the page) and type in Braised Spareribs with Rigatoni. This is a recipe by Lidia Bastianich and it is incredibly delicious (I've also used beef back ribs in this recipe). Serve a green salad and bread with it.
If you want to do something lighter with pasta, I've posted an easy and quick recipe here (again, use the search feature) for Fresh Tuna and Pasta. It's mixture of cubes of tuna, tomato, olives and pasta, and would also be good served with a green salad and bread.
If you need another chicken recipe, please search for a popular recipe posted here by Gina, FL called Grecian Chicken. It is another easy recipe (you can prep ahead), with boneless chicken breasts stuffed with a feta cheese and spinach filling and wrapped with bacon. I would only add to the directions to quickly brown the bacon-wrapped chicken in a saute pan before baking, and reducing the baking time to 40 minutes (this browns the bacon without overcooking the chicken breast, I feel). You might want to serve this with a rice side dish and a quick saute of green beans with cherry tomatoes.
