re: Pineapple Casserole
I have loved a similar recipe, Betty! It is called "Pineapple Bake" and is from the Silver Palate Good Times Cookbook. The only difference is that this recipe calls for brown sugar instead of white, and thick slices of good French or Italian bread. The butter called for is unsalted, and the amount of crushed pineapple is 2 cups (but I'd substitute the 15 oz. standard can, too).
I have to say that this is a very popular side dish when I have made it (meant as a side dish instead of a dessert in this cookbook, since it isn't too sweet), especially good for brunch!
