Recipe(tried): Susie's Salad (salad greens, apples, canberries, parmesan, almonds)
Salads - Fruit, GelatinThis is called Susie's salad cause my sister Susie first introduced this to us...its the best salad I have ever eaten.
Salad (I usually double)
10 oz mixed salad greens
1 medium red apple (I use delicious)
1 medium green apple (I use Granny Smith)
1 cup Shredded Parmesan cheese
1/2 cup dried cranberries (Craisins)
1/2 cup toasted slivered almonds
Mix the salad all together. DO NOT put dressing on salad till just as you serve. It will wilt the greens. Its great the next day, even wilted, but when first served its nice to have greens crisp.
DRESSING
1 cup dried or fresh cranberries
1/2 cup sugar
1/c White vinegar
1/4 cup apple juice concentrate( you can get in the supermarket in the juice isle -in a can that looks like a soft drink)
1 tsp salt
1 tsp ground mustard
1 tsp grated onion
1 cup vegetable oil
Mix all ingredients EXCEPT the oil in a blender till smooth- while still processing add the oil in a steady stream.
Drizzle over the salad - NOTE: you will probably not have to use all the dressing. Put on a bit at a time to taste- I always have some left.
