I grew up in Alabama on biscuits and gravy. My daughter always wants to know if we are going to have ham gravy. I fry a slice of ham in a large skillet with about 2-3 tablespoons of bacon grease (can use oil), but bacon grease is the best. Fry the ham on both sides until real brown. Remove the ham and add 3 tablespoons of flour. Scrape the pan as you stir in the flour. Reduce heat and stir the flour until golden. Slowly pour in 3 cups of can evaporated milk or cream. Continue stiring until thick. Can chop up some of the ham to put in gravy. If you have baked a ham you can pour some of the ham juice from the pan into the gravy.
