Well, it is apple season and I went "appling" at my friend's farm last week. My kids finished the last of the apples with the peeler/corer/slicer today, and I froze the rest of the processed apples, having already canned apple sauce and apple juice this week. Today I also made a pie, and my guys pronounced it delicious! Simple, too...
CARAMEL APPLE PIE
one pie crust (I used ready-made) about 8 small peeled, cored and sliced apples lemon juice a couple of handsfull of butterscotch chips FOR THE TOPPING: 2 TBSP of butter, melted 1/4 cup oatmeal, uncooked 1/4 cup flour (I used whole wheat) 1/4 cup brown sugar 1 TBSP ground cinnamon pinch of salt
Prepare pie crust and put into pie plate, crimping the edges as you like.
Mix together the apples, lemon juice and butterscotch chips. Put the mixture into the pie plate on top of the crust.
Stir together the topping, and sprinkle over the apples.
Bake at 425 degrees F for about 20 minutes, and then lower the heat to 350 and bake for about 45 minutes more.
