INSIDE OUT CHOCOLATE STRAWBERRIES
24 to 36 medium strawberries 1 cup semisweet chocolate chips 2 tbsp heavy (whipping) cream 4 oz cream cheese, room temperature 1/4 cup powdered sugar
Remove stems and partially hollow out strawberries. Cut a sliver off the bottom of each strawberry so it will stand on end. Set aside.
Place chocolate chips and cream in a small microwave safe bowl. Microwave on high for 30 seconds; stir until creamy. Microwave again at 10 second intervals if necessary. Stir each time until chips are melted. Cool slightly.
Place cream cheese and powdered sugar in a large mixer bowl. Beat until creamy. Beat in chocolate mixture.
Transfer chocolate mixture into a large pastry bag with a star tip. Pipe mixture into strawberry. Fill completely and mounding mixture on top of berry. Refrigerate at least 1 hour before serving. Eat within 24 hours. |
