PEAR CORDIAL
3 pears (or 6 dried pears) 1 orange 3 whole cloves 1 whole peppercorn 1/2 tsp whole coriander 1/2 tsp ground cinnamon 600ml (1 pint) Vodka FOR THE SUGAR SOLUTION: 450g (1lb) sugar, dissolved in 120ml (4 floz) water
Remove seeds and dice pears. Carefully remove the peel from the orange avoiding the white pith.
Place the pear, spices and the orange peel in a glass jar. Add vodka, cover, and leave for 2 weeks.
Strain through a muslin cloth and add sugar solution. Leave until clear. |
