COLD WATER BUNS
9 cups all-purpose flour 1/2 cup sugar 2 tbsp. instant yeast 1 tbsp. salt 1 cup Crisco vegetable shortening 8 cups water COLD
Combine all dry ingredients except the cold water.
Add all 8 cups cold water. Adjust flour or water if needed.
Mix, knead, let rise.
Punch down, let rise again.
Don't punch down but cut and form buns. Place on sheet pans. Let rise.
Bake in 350 degree F oven for 12 to 15 minutes. About half way thru baking cycle switch trays in relation to position in oven.
This will make two 3/4 sheet pans of buns of various size and shape. |
