I made this gravy the last time I made a ham and I was suprized how good it was!
* After ham is cooked remove the ham and add 1 cup of hot water to the pan, stir and scrape to deglaze.
* In a small suace pan, melt 3 tablespoons of butter. Once melted add 3 tablespoons of flour and stir over med heat to form a roux. Cook butter/flour mixture at least 1 to 2 minutes, (longer and lower heat will produce a more nutty, complex flavor).
* Add drippings to the roux and continue to cook stirring constantly until thick, (approximately 5 min).
