ONE PAN PUMPKIN BREAD
1/3 cup vegetable oil 1 cup canned pumpkin 3 eggs 2 1/3 cups Bisquick baking mix 1 1/4 cups sugar 2 teaspoons ground cinnamon 1/2 cup raisins
Heat oven to 350 degrees F. Generously grease bottom of loaf pan, 9x5x3 inches.
Stir all ingredients except raisins in pan with fork until moistened; beat vigorously 1 minute. Stir in raisins.
Bake until wooden pick inserted in center comes out clean, 45 to 55 minutes. Cool 5 minutes. Run knife or metal spatula around sides of loaf, pressing gently to loosen; remove from pan.
High Altitude Directions (3500 to 6500 feet): Heat oven to 375 degrees F. Increase eggs to 4. Decrease baking mix to 2 cups and sugar to 1 cup. Add 1/4 cup flour.
