APPLE-SAUCY RED CABBAGE
1 medium red cabbage 8 medium red apples 1/2 teaspoon ground cinnamon 1/8 teaspoon ground ginger 1/8 teaspoon ground nutmeg 1/4 cup cider vinegar 3/4 cup sugar Salt (to taste)
Wash and shred cabbage. Put in kettle with enough water to cover bottom of pot.
Peel, core and slice apples and arrange on top of cabbage. Add cinnamon, ginger and nutmeg and simmer about 15 minutes. Stir well, remove from heat, cool slightly
Mash cabbage and apple mixture; add vinegar, sugar, and salt to taste. Serve hot or cold.
