ATLANTIC HOUSE CHEESE BISCUITS
Makes about 60 biscuits

2 cups whole milk
1/2 cup pure honey
3 large eggs
1/4 cup melted butter (plus more for brushing tops)
1/8 cup yeast (or 4 packages (1-ounce each) active dry yeast)
3/4 (60-ounce size) box Bisquick Baking Mix (about 5 2/3 cups)
1 cup shredded sharp cheddar cheese
1/2 teaspoon baking powder

In a pan, combine the milk, honey, eggs and melted butter. Heat to 110 degrees F, then add yeast and let stand 5 minutes.

In a large mixing bowl, combine the Bisquick mix, cheese and baking powder. Add the milk-egg mixture and stir together. Let the dough proof for 5-10 minutes.

On a floured surface, roll out the dough and cut out with a biscuit cutter (makes about 60 biscuits).

Bake at 400 degrees until golden brown, about 10-12 minutes. When done, brush the top with plenty of butter and enjoy.

ABOUT THE RECIPE:
A year and a half ago, in May 2006, Mrs. Charlie Hall Jr. of Mount Pleasant asked for recipes from the old Atlantic House restaurant on Folly Beach, which was done in by Hurricane Hugo. She was particularly fond of the little biscuits that were served before the meal.

Last month, former restaurant owner Edwin S. Taylor wrote to The Post and Courier: "Having been recently notified that one of your readers requested an old family recipe for our famous Atlantic House cheese biscuits, I began in investigation into the archives ... (dusty boxes stored in the garage). The following was converted from a large-batch recipe ... It may take a little practice to get it right."
