Recipe: Buttermilk Cake

BUTTERMILK CAKE
2 sticks butter or oleo
2 c. sugar
2 c. + 2 T. flour
1/2 c. buttermilk
1 c. water
1 tsp. salt
1 tsp. baking soda
3 eggs
1 T. vanilla
Bring oleo and water to a boil. Remove from heat. In a mixing bowl, combine dry ingredients. In another bowl, beat eggs and buttermilk and vanilla. Add both liquid mixtures to dry ingredients and beat well. Pour into a greased and floured 15x10 jelly roll pan. Bake at 350 for 20 minutes. Cool slightly and frost.
FROSTING:
1 stick oleo
1 lb. powdered sugar
4 T. buttermilk
1 T. vanilla
1 c. nuts, chopped
Bring oleo and buttermilk to a boil. Remove from heat; add sugar, vanilla and nuts. Beat until creamy.
You can bake this in a 9x13 pan for a little thicker cake.
