Hi, I saw a request for Flitch Pie at another lost recipe site and the responder posted this candy recipe:

Flitch (old fashioned potato candy)

1 potato (about the size of an egg)
1 lb 4X confectioners sugar
pure vanilla extract (optional)
Peanut butter

Peel and boil potato. In a dish, mash potato smooth with a fork. Begin mixing in confectioners sugar. Continue adding sugar and mixing until the mixture is the consistency of dough. If desired, add a few drops of vanilla.
Sprinkle a little 4X sugar on a cutting board and roll the mixture to a 1/4 inch thickness. Spread peanut butter atop the rolled mixture. Roll up the sheet, loosening it from the board with a knife as you roll. Cut into slices and serve.
