A couple of years ago, for Christmas, I made up big baskets of goodies, and I used several of my favorite quick bread recipes, without any changes, and baked them in those little foil pans - I don't know how those compare in size to what you're talking about.
Anyway, as long as you only fill whatever size pan you're using 3/4 full, you shouldn't have "run over" problems, but you will have to adjust the time - I think I did them around 20 minutes maybe a little more - you'll have to check them by touch or toothpick to be sure.
Mine came out just fine without recipe ingredient adjustments and each gift basket was able to have 3 or four different flavored little quick bread loafs - Enjoy your project.
