GINGER NUT CAKE
1/2 cup Crisco vegetable shortening
1/2 cup sugar
1 egg, beaten
2 1/2 cups all purpose flour, sifted
1 1/2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
3 tsp. unsweetened cocoa powder
1/2 tsp. salt
1 cup dark corn syrup (dark Karo)
1 cup hot water
1/2 cup chopped nuts
3/4 cup raisins
Preheat oven to 350 degrees F. Grease and flour a tube pan.
Cream Crisco and sugar together. Add beaten egg.
Measure and sift together dry ingredients.
Combine syrup and hot water, stir until dissolved. Add dry ingredients alternately with liquid a small amount at a time and beat after each addition until smooth. Place in prepared pan.
Bake at 350 degrees F, approximately 65 minutes, test with toothpick.
Makes 1 tube cake
