APRICOT KOLACHY
1/2 cup butter or margarine, softened 1 (3 oz.) pkg. cream cheese, softened 1 cup flour 1 cup chopped dried apricots 1 cup water 1/2 cup sugar 1 tsp. grated orange peel 2 tbsp. orange juice
Cream butter and cream cheese with electric mixer. Reduce speed to low and mix in flour. Chill dough in refrigerator.
Cook apricots in water until tender. Stir in sugar, orange peel and juice. Cool.
Divide dough in half on floured surface. Roll each part into 8 inch squares. Cut in 16 (2 inch) squares. Drop a teaspoonful of apricot in the center. Fold in half matching corners. Press to seal edges.
Bake on greased cookie sheet in 375 degree oven for 15-20 minutes.
