PECAN-ANISE MUFFINS
2 cups sifted all-purpose flour 1/4 cup sugar (plus additional for tops, optinal) 3 teaspoons baking powder 1/2 teaspoon salt 1/2 cup finely chopped pecans 2 teaspoons grated lemon rind 3/4 teaspoon anise seed, crushed 1 egg, slightly beaten 1 cup milk 3 tablespoons salad oil
Sift flour, sugar, baking powder and salt together into bowl. Add pecans, lemon rind and anise seed; mix well.
Combine egg, milk and salad oil. Add to dry ingredients and stir until just combined. Fill greased muffin pans 3/4 full. Sprinkle sugar on top of each muffin, if desired.
Bake at 425 degrees F for 18-20 minutes.
