DUTCH APPLE BARS
FOR THE CRUST: 3/4 cup butter, softened 1/4 cup sugar 1 egg, beaten 1 teaspoon vanilla 2 cups flour 1/4 teaspoon salt
Combine butter, sugar, egg and vanilla. Stir in flour and salt. Press evenly into lightly greased 15x10x1-inch jelly roll pan.
FOR THE FILLING: 5 cups thinly sliced, pared apples (any but Red Delicious) 2 tablespoons lemon juice 1/4 cup sugar 3 tablespoons all-purpose flour 1 teaspoon grated lemon peel 1/2 teaspoon ground cinnamon 1/2 cup golden raisins
Sprinkle apple slices with lemon juice, then toss with sugar, flour, lemon peel, cinnamon and raisins. Spread evenly over crust.
FOR THE TOPPING: 3/4 cup flour 1/2 cup brown sugar, packed 1/3 cup cold butter
Combine flour and brown sugar; cut in butter until crumbly. Sprinkle evenly over apple mixture.
Bake 25 to 30 minutes at 400 degrees F, until apples are tender.
