YORK SPRINGS APPLE PIE

"The sliced apples are slightly cooked and thickened before putting them into the piecrust."

FOR THE APPLE:
8 cups sliced pared Golden Delicious apples
3/4 cup water
2 tablespoons lemon juice
1/2 cup granulated sugar
2 tablespoons cornstarch
1/4 teaspoon seasoned salt
1 teaspoon butter or margarine
FOR THE PASTRY:
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup shortening
4 to 5 tablespoons cold water
1/4 cup all-purpose flour
2 tablespoons brown sugar
1/8 teaspoon baking soda
1 tablespoon butter or margarine
Green and red decorative sugar

TO PREPARE THE APPLES:
In large saucepan, combine apples, the 3/4 cup water, and lemon juice. Bring to boiling. Cover; reduce heat and simmer till apples are slightly transparent, about 5 minutes, stirring occasionally. Remove apples from liquid, reserving liquid.

Combine granulated sugar, cornstarch, seasoned salt, and the 1 teaspoon butter or margarine.

Measure the reserved liquid (should have about 3/4 cup). Add cornstarch mixture; cook and stir till mixture thickens and bubbles.

Stir into apples; cool fruit mixture in refrigerator while preparing pastry.

TO PREPARE THE PASTRY:
Stir together the 1 1/2 cups flour and 1/2 teaspoon salt; cut in shortening till pieces are the size of small peas. Sprinkle 1 tablespoon water over part of mixture. Gently toss with fork; push to side of bowl. Repeat till all is moistened. Form into a ball.

TO PREPARE THE PIE:
Flatten pastry on lightly floured surface with hand and roll out to 1/8-inch thickness. Line 9-inch pie plate, building extra-high edges. Trim and flute edges, reserving trimmings. Turn cooled apple mixture into pastry shell.

Combine the 1/4 cup all- purpose flour, brown sugar, and baking soda. Cut in the 1 tablespoon butter till mixture crumbly. Sprinkle over pie.

Re-roll reserved pastry trimmings and cut out 5 apples with cookie cutter or paper pattern. Arrange atop pie. Sprinkle apple portion of cutouts with red sugar and leaf portion with green sugar.

Bake in 400 degree F oven 35 to 40 minutes or till done. If crust browns too quickly, cover edge with foil.
