APPLESAUCE PUFFS
2 cups packaged biscuit mix 1/2 cup sugar, divided use 1 1/4 teaspoons ground cinnamon 1/2 cup applesauce 1/4 cup milk 1 slightly beaten egg 2 tablespoons cooking oil 2 tablespoons butter or margarine, melted
Combine biscuit mix, 1/4 cup sugar, and the 1 teaspoon cinnamon. Add applesauce, milk, egg, and cooking oil. Beat vigorously for 30 seconds. Fill greased 2-inch muffin pans two-thirds full.
Bake in hot oven (400 degrees F) 12 minutes or till golden. Cool slightly; remove from pans.
Mix the remaining 1/4 cup sugar and the remaining 1/4 teaspoon cinnamon.
Dip tops of muffins in the melted butter or margarine, then in the sugar-cinnamon mixture.
