STAR FRUIT BREAD
2 cups flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1 cup sugar, 1/2 cup butter, softened 3 eggs 1 teaspoon white wine 2 cups star fruit, mashed 1 cup chopped coconut
Preheat oven to 350 degrees F.
In a small bowl, combine flour, baking powder and salt.
In a large bowl, cream sugar and butter and then cream in eggs. Blend in white wine and star fruit. Stir in flour mixture, blending thoroughly and then stir in coconut. Spoon into a well greased 8 1/2 x 4 1/2 x 2 1/2 inch bread pan.
Bake for 50 minutes or until a toothpick comes out clean.
CARAMBOLA BREAD Source: Trinigourmet Serving Size: 12
Ingredients: 1 cup pureed five fingers (carambola/star fruit) - about 3 to 4 small 1 cup sugar 3/4 cup milk 1 egg 1 cup whole wheat flour 1 cup white flour 3/4 teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon ginger 1/2 teaspoon cinnamon 1/4 cup raisins
Preheat the oven to 350 F and oil or spray one large (9 X5X3-inch) loaf pan.
In a large mixing bowl, combine the puree, sugar, milk, and egg.
In another bowl, combine the remaining dry ingredients and mix well. Slowly add the dry ingredients to the wet, and stir just until all the flour is moistened. Do not over-stir. Pour into the prepared loaf pan(s).
Bake until a toothpick inserted in the middle comes out clean, about 35-40 minutes. (If using a black non-stick baking tin reduce the heat to 325 degrees F.)
STAR FRUIT COCONUT MUFFINS Source: Suncoast Scribe
1 stick butter, softened 1/3 cup sugar 1 Tablespoon molasses 1 egg 1 cup white flour 1/2 cup whole-wheat flour 1/2 cup quick oats 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1 cup buttermilk 1/4 cup chopped star fruit (carambola) 1/4 cup flaked coconut 1 Tablespoon grated orange peel 12 slices star fruit powdered sugar for dusting
Preheat oven to 375 degrees. In a large bowl, beat together butter and sugar until fluffy. Add molasses and eggs; beat until well blended.
In medium bowl, combine flours, oats, baking soda, baking powder, cinnamon, and salt. Stir flour mixture into butter mixture alternately with buttermilk, beginning and ending with flour mixture. Fold in chopped star fruit, coconut, and orange peel.
Divide batter into 12 paper-lined muffin cups, filling each 2/3 full. Top each cup with one star fruit slice.
Bake 20 to 25 minutes or until golden brown and spring back when pressed lightly. Cool on rack 5 minutes; remove from pan and dust with powdered sugar.
STAR FRUIT UPSIDE DOWN CAKE Source: Taste of Home Makes 8 servings
3 to 4 star fruit, sliced 1/4 cup butter, melted 2/3 cup dark brown sugar juice of 2 passion fruit 1/2 cup butter, softened 1 cup sugar 2 eggs 1 1/2 cups cake flour 1 1/2 teaspoons baking powder pinch of salt 1/2 cup milk 1 teaspoon each of vanilla and almond extract
Preheat oven to 350 degrees F.
Arrange sliced star fruit in bottom of a greased 9 inch cake pan as close together as possible.
Mix together 1/4 cup butter, brown sugar and passion fruit juice and pour into pan, turning so mixture covers bottom. Set aside.
Cream together 1/2 cup of butter and sugar. Add eggs, one at a time, beat well. Mix together dry ingredients. Add flour mixture, alternately with milk, to butter mixture. Stir in vanilla and almond extracts. Pour into prepared cake pan.
Bake for approximately 30 minutes or until cake pulls away form sides of pan. Let cool for five minutes before inverting onto serving plate.
CARAMBOLA BREAD Source: Tropicalia (Ft. Myers NewsPress) Makes 2 loaves
3 eggs 2 cups sugar 1 cup oil 2 cups carambola (chopped fine)- 3 small or 2 large 2 tsp vanilla 3 cups flour 1/2 tsp baking powder 1/4 tsp ground cloves 1/4 tsp ground cinnamon 1/4 tsp salt 1 cup chopped nuts (i used pecans)
Preheat oven to 350 degrees F.
Beat eggs until light and foamy. Add the sugar, oil, carambola and vanilla. Mix lightly, but well, by hand.
Combine dry ingredients, sifted together, to first mixture and blend well. Stir in nuts.Pour into 2 greased and floured 9 X 5 X 3 loaf pans.
Bake at 350 degrees F for 15 minutes, lower heat to 325 degrees F and continue to bake for 45 more minutes. Test for doneness. |
