OATMEAL SPICE CAKE WITH BROILED ICING
1 1/2 cups boiling water 1 cup quick-cooking rolled oats, uncooked 1/2 cup butter 1 cup sugar 1 cup firmly packed brown sugar 2 eggs 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/2 teaspoon ground nutmeg 1 1/2 cups flour 1/2 cup chopped nuts Icing (recipe follows)
Combine water and oats. Set aside.
Cream butter and sugars until well blended. Add eggs, baking soda, cinnamon, salt and nutmeg; beat well. Stir in oatmeal, flour and nuts, blending well. Pour into 13 x 9-inch pan, greased and floured on the bottom.
Bake at 350 degrees F for 30 to 35 minutes or until cake springs back when touched lightly in center.
Spread Icing on warm cake. Broil 2 to 4 minutes or until golden brown.
FOR THE BROILED ICING: 1/2 cup sugar 1/4 cup brown sugar 1/4 cup light cream 1/4 cup butter 1 cup coconut 1/4 teaspoon vanilla
Combine all ingredients in saucepan. Heat until warm and butter is melted.
