PEANUT BUTTER ORANGE QUICK BREAD
3/4 cup chunky peanut butter 3 tablespoons butter or margarine, softened 1 3/4 cups whole wheat flour 1/3 cup sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon salt 1 cup orange juice 1/2 cup finely chopped or ground orange, with rind (1 small orange) 1 egg, beaten
In large bowl, combine peanut butter and butter until well mixed. Stir in flour, sugar, baking powder, baking soda and salt. With fork, stir until well mixed and crumbly. Set aside.
Blend together orange juice, ground orange and egg. Stir into peanut butter mixture until well moistened. Pour into greased 9 x 5-inch loaf pan.
Bake in 350 degree F oven 45 to 50 minutes or until toothpick comes out clean. Remove from pan and cool on rack, two to three hours.
