This appeared in my local newspaper decades ago. I have never gotten around to trying it, so I can't tell you what the result is like. Hope you find it useful.
BANANA GLAZE
1 cup mashed banana 1 cup sugar 2 tablespoons fresh lemon juice
Combine banana and sugar in small saucepan and bring to boil. Cook over low heat, stirring for 5 minutes. Remove from heat; add lemon juice. While warm, push through strainer.
Cool and use as glaze on banana walnut bread or other fruit breads.
Store in refrigerator. Yields 1 1/4 cups |
