I've had this recipe for many years - my family requests this Thanksgiving and Christmas. It is almost like a dessert. Hope you enjoy!!!
3 C. Mashed Sweet Potatoes
1 C. Brown Sugar
2 Eggs
1 Stick Melted Butter
1/3 C. Eagle Brand Condensed Milk
1 Tab. Vanilla (Yes)
1/2 teas. Pumpkin Pie Spice
Pinch of Salt
- Mix and put in greased large glass Pyrex casserole.
- Combine the following ingredients for the topping:
1 C. Brown Sugar
1/3 C. Flour
1/3 C. Butter, softened
1 C. Chopped Pecans
- Sprinkle on top of potato mixture. Bake 30 minutes at 350 degrees.
Homemade Sweetened Condensed Milk
1 C. Instant Nonfat Dry Milk
1/3 C. Boiling Water
3 Tab. Margarine or Butter
2/3 C. Sugar
Pinch of Salt
- Put in blender and process until smooth. Keeps several weeks in refrigerator.
