1/4 cup kosher salt
1/4 cup dark brown sugar
4 cloves garlic -- minced
2 tablespoons onion -- minced
4 teaspoons pepper
2 teaspoons red pepper flakes
1 teaspoon ground ginger
1/2 teaspoon ground allspice
Mix all ingredients. Throughly rub spice mixture over surface and into cavities of turkey. Refrigerate, well wrapped, up to 2 days. Before grilling, rinse turkey throughly, and pat dry.
