1/2 lbs. bacon
1 1/2 large turnips
2 cups chopped onion
1 clove garlic
1/2 a green pepper chopped
6 oz evaporated milk
2 egg yolks
3 slices bread
1/4 cup butter
2 tsp. green onion
1 tsp. parsley
salt and pepper to taste
Peel and boil turnip until tender. Drain and mash. Saute chopped bacon in a dutch oven. When 1/2 cooked add onions, green pepper and garlic. Saute until veggies are tender. Drain grease. Stir in mashed turnip. In a small bowl beat together egg yolks and milk. Toast bread and crumble. Add egg mixture, bread crumbs, onions,parsley, salt and pepper to the turnip mixture. Spoon into a large casserole dish. Bake at 350 degrees for 30 minutes.
