Recipe: Fran/CA Repost: Confection Fruitcake

Here is one from TKL archives, does it help? Perhaps the person you received it from substituted pineapple for dates? There are also recipes like this called Texas Fruit Cake. However, I haven't seen one with pineapple.

Your cake looks very good....I too got this recipe from a local paper years ago. We do not like candied fruit in anything. This beautiful cake has only nuts, dates and cherries and is soaked in Brandy, and is super easy to throw together.

CONFECTION FRUIT CAKE

Yields 1 loaf

3 cups Brazil nuts, pecans or walnuts
3 cups pitted dates
1 cup drained maraschino cherries
3/4 cup sifted all-purpose flour
3/4 cup sugar
1/2 teaspoon baking pwder
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla
Brandy

Into a large mixing bowl place whole or halved nuts, dates and whole cherries. Sift flour with sugar, baking powder and salt; sift over fruit-nut mixture. Mix with clean hands until all ingredients are well coated.

Beat eggs in a separate bowl until frothy; add vanilla. Pour egg over fruit-nut mixture, again mix with hands.

Put batter into a greased, wax paper-lined 9 1/2x5 1/2x2 1/2" loaf baking pan. Bake in a 300 oven for 1 3/4 hours. Cool cake, pour Brandy over it and store several days before slicing. Mmmm mmm good!
