Recipe: Cranberry Pineapple Sauce (repost)

Misc.
Hi Marc,

I hope this is the one!

Recipe(tried): Cranberry-Pineapple Sauce
Posted By: Jan, AZ
Date: November 3rd 1998
Board: recipelink.com Cooking Club

3 cups cranberries
1 cup (8 oz.) pineapple chunks with juice
1/2 cup sugar
1 cup orange juice
1 medium orange zest, grated

Pulse 3 cups cranberries, 1 cup pineapple chunks with juice and 1/2 cup sugar in a food processor or blender. Transfer to a saucepan, add 1 cup orange juice and cook for 10 minutes. Stir in the grated zest of 1 medium orange.
Makes 2-1/2 cups.

This is soooo good. Once when I made it I was in a big hurry and didn't have time to juice fresh oranges, so I just used bottled orange-mango-tangerine punch and it was still wonderful.

Happy Holiday Cooking,

Betsy
