Chinese ham (yunnan ham, xuanwei ham)
Chinese dry-cured hams produced in China’s western provinces of Yunnan and Hunan are world famous. They are extremely popular in China, although they are not permitted to be imported into the United States. Smithfield ham is the closest substitute.

CHINESE HAM, PHILIPPINE-STYLE (HAMON)Source: Recipehound
Serves: 6-8
1 leg cured Chinese ham (about 3 pounds)
2 cups pineapple juice (approzimately)
1 (6-ounce) can pineapple rings
GLAZE:
4 cups brown sugar
1 cup pineapple juice
Soak ham in water to cover overnight. Then place meat in a large pan and add enough pineapple juice to cover it three-quarters of the way up. Simmer, using 20 minutes per pound as a guide for how long to cook. Trim fat off ham if desired.
Preheat oven to 350 degrees F. Mix brown sugar and pineapple juice and glaze ham with the mixture. Bake for 30 minutes. Cut into serving pieces. Garnish with pineapple rings when serving.

Noche Buena is never complete without the traditional chinese Ham. The common glaze used is pineapple but this time, I used Apple-cinnamon glaze.
1 (2 to 3 kilos) Chinese Cooked Ham
2 cups Apple Juice
1/4 cup cherry brandy
1 1/2 cups brown sugar
1 medium apple, chopped
2 pieces bay leaf
1 tsp cinnamon powder
slices of green and red cherries
toasted cashew nuts
celery leaves
Preheat oven to 375 degree F
Place Chinese ham in oven proof dish. Set aside
Combine apple juice, chopped apple, brown sugar, brandy, cinnamon powder and bay leaf. Stir until brown sugar dissolves. Pour on ham and bake for 20 minutes basting with marinade once in a while.
Arrange baked Chinese Ham in a serving platter.
Boil Extra sauce until thick.
Pour apple glaze on top. Garnish with slices of apples, celery leaves, cashew nuts and red cherries
