Here's mine:
In frying pan, put 2 Tbs. cooking oil, 2 Tbs.
flour, 2 Tbs. chili powder (more or less,
depending on how spicy you like it.) Add 1 tsp.
salt and about 1 cup of cold water. Blend ingredients
together and heat on medium, stirring until
thickened like gravy. This can easily be
doubled or even tripled depending on how
many enchilades you are making. Just make
sure you don't put in too much salt or chili
powder. Double the other ingred. first and
then taste.
