Netted roast pork I - Gorenjska prata

50 dag smoked pork head or smoked pork
1 kg old white bread, cut in cubes
2 dl milk
1 onion, chopped
2 tablespoons parsley, chopped
10 eggs
salt to taste
pepper to taste
1 pork net
1 tablespoon lard
Cut bread to cubes and sprinkle with milk. Cook pork head. When cold, carefully bone the meat. Roast onion until it looks glassy. Mix meat and bread, add onion, parsley, salt, pepper, and then beaten eggs. Bread should not be too softened. Wrap the mixture in pork net and form a loaf. Bake slowly, until the net is brown and crispy. Let it stand and then slice and serve warm instead of potato with sauce or salad or cold. Slovenians often prepare prata for Easter together with cooked ham and horseradish.
