COGNAC CAKE (PARGOGHEE GARGANTAG)

Makes approximately 24 pieces
4 eggs
1 1/2 cups sugar
l 1/2 cups flour
1/2 cup boiling water
1 1/2 tsp. cognac
2 tsp. baking powder
1/2 tsp. grated lemon peel
1 tsp. vanilla
1/2 cup walnuts, chopped fine
Beat eggs thoroughly with mixer on high speed. Add sugar and stir.
Add flour and slowly add hot water, beating all the while on low speed.
Stir in cognac, baking powder, lemon peel, vanilla and nuts.
Bake in greased and floured 9x13 pan in preheated 350F oven for 35 minutes.
FARINA CAKE (FARINA GARGANTAG)

Makes 24 pieces
1 cup butter, melted
4 eggs, beaten
3 1/2 cups farina
2 1/2 cups sugar
1 1/2 cups milk
3 tsp. baking powder
1 lemon (grated rind only)
1 tsp. vanilla
Mix melted butter and eggs. Add remaining ingredients and mix again. Pour mixture into greased and floured l0xl5-inch pan.
Bake 20-25 minutes in preheated 350F oven. When cooled, cut diagonally and pour syrup over it.
SYRUP:
2 cups of sugar
1 cup water
1 tbsp. lemon juice
Boil together for 10 minutes.
YOGURT CAKE 1 (MADZOON GARGANTAG)

Makes approximately 30 pieces
CAKE:
1 1/2 cups sugar
1/2 lb. (1 cup) margarine
3 eggs, beaten
1 tsp. vanilla
2 1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup yogurt
TOPPING:
1/2 cup brown sugar
1 cup walnuts
2 tsp. cinnamon
Blend together margarine, sugar, eggs, and vanilla.
Combine ingredients for topping.
Combine dry ingredients. Mix into sugar mixture alternately with yogurt. Pour half of cake batter in greased pan 14x9-inch baking pan. Sprinkle 2/3 of topping over batter. Then pour rest of batter on top and sprinkle remaining topping over this.
Bake in preheated 350F oven for 45 minutes. Cut into diamond shapes or squares.
YOGURT CAKE 2 (MADZOON GARGANTAG)

Makes 24 pieces
1/4 cup shortening
1/4 cup butter, softened
1 1/2 cups sugar
3 eggs, beaten
2 1/2 cups cake flour
l 1/2 tsp. nutmeg
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. vanilla
1 cup yogurt
TOPPING:
1/2 cup brown sugar
1 tbsp. butter
1/2 cup walnuts
1 cup grated coconut
1/4 cup top milk or cream
1/4 tsp. vanilla
Cream together shortening and butter. Beat in sugar and eggs.
Sift together dry ingredients and add alternately with yogurt to other mixture.
Add vanilla, mix, and pour into 9x13-inch baking pan.
Bake in preheated 325F oven for 40-45 minutes.
FOR TOPPING:
Mix together brown sugar and butter. Adding walnuts, coconut, cream and vanilla. Spread on cooled cake and put under broiler until evenly browned.
COCONUT CAKE 1 (HUNTK UNGOUYZI GARGANTAG)

Makes 24 pieces
1 stick (1/2 cup) butter, softened
1 cup sugar
4 eggs
2 tbsp. sour cream
2 cups farina
1/2 lb. grated coconut
1 cup flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1/2 cup walnuts, crushed
Syrup (recipe follows)
Cream butter, add sugar, eggs. and sour cream and beat.
In another bowl combine farina and coconut, flour, baking powder, baking soda, vanilla and crushed walnuts. Add to creamed butter mixture and blend. Pour into a greased and floured cake pan (l0x15-inch).
Bake in preheated 350F oven for 20 minutes.
When baked and cooled, cut diagonally and cover with syrup.
SYRUP:
2 cups sugar
1 cup water
1 tbsp. lemon juice
Boil sugar and water for 10 minutes and add lemon juice.
COCONUT CAKE 2 (HUNTK UNGOUYZI GARGANTAG)

3 eggs, beaten
2 cups sugar
1/2 cup vegetable shortening, melted
1/2 cup margarine, melted
1 tbsp. whiskey or cognac
1 tsp. vanilla
1/2 tsp. grated lemon peel
3 cups flour
2 cups grated coconut
3 tsp. baking powder
1 cup yogurt
Mix eggs and sugar. Stir in shortening, butter, whiskey, vanilla, and lemon peel.
Combine dry ingredients and add to egg mixture alternately with the yogurt. Pour into greased and floured llxl7x2-inch pan.
Bake in preheated 350F oven for 35-40 minutes.
