NORWEGIAN TOAST

1 stick (1/2 cup or 8 tablespoons) butter
3/4 cup sugar
1 egg
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon ground cardamom
1/2 teaspoon ground mace
1/2 cup buttermilk

Preheat oven to 350 degrees F. Lightly grease 9-inch loaf pan. Lightly grease baking sheet.

In bowl, cream together butter and sugar, then beat in egg.

In another bowl, sift together flour, baking soda, cardamom and mace. Add dry ingredients to butter mixture alternately with buttermilk and stir until just combined. Do not beat. Turn batter into prepared pan.

Bake 35-40 minutes, or until loaf test done with toothpick. Remove from oven and cool in pan about 5 minutes. Turn loaf from pan and finish cooling on wire rack.

Slice loaf into 1/2 to 1/4-inch slices. Lay slices on prepared baking sheet and bake 10 minutes per side. Remove slices from oven, cool on rack. Store in airtight container.

Makes 1 loaf
