Chicken and Artichoke Casserole
4 fresh chicken breasts, boiled and cut into bite-sized pieces
2 small pkg frozen artichoke hearts
1 cup parmesan
1 cup white sauce
rosemary
Marsala
1/2 cup mushrooms, sliced
Make white sauce and, while hot, add parmesan, rosemary to taste and 1/4 cup marsala
Saute mushrooms in olive oil and a dash of marsala
In a casserole dish, layer the chicken pieces.
Cover with hearts. Spoon sauce over artichokes to cover all. Uncovered hearts will dry-out.
Pour mushrooms over the top and back at 325 to warm.
Serve over rice.
