Recipe: Onion Pie

Onion Pie
Recipe By : Today's Farmer Sept, 2000
Betty Gardner, Lamar, MO
Serving Size : 6

30 small crackers -- crushed
1/2 cup butter -- melted
3 cups onion -- sliced
1/4 cup butter
1/2 pound Cheddar cheese -- grated
1 1/2 cups milk -- scaled
3 eggs -- beaten
1 teaspoon salt
1/2 teaspoon pepper

Mix cracker crumbs in 1/2 cup butter and press into a shallow, greased 2 quart baking dish.

Saut onions in 1/4 cup butter; pour over cracker crumbs. Sprinkle with grated cheese.

Mix together milk, eggs, salt and pepper; pour over cheese.

Bake at 350F for 30 minutes or until set like custard.
