Pork Chops in Mustard Sauce
4 center cut pork chops
flour to coat chops
1/4 tsp. salt
1/4 tsp. pepper
3 cloves garlic,minced
1 cup onion,chopped
1 tsp. fresh Thyme, or 1/2 tsp. dried
1 tsp. fresh rosemary, or 1/2 tsp.dried
1/4 cup white wine
1/2 cup chicken stock
1 Tbsp. mustard
1 Tbsp. sweet relish
3 Tbsp. olive oil
Heat oil in pan over medium high heat.
Season with salt & pepper then dust with flour. Cook on each side until done (4 to 5 minutes each side); remove.
Saute onion & garlic 2 to 3 minutes, add wine & reduce by 1/2.
Add chicken stock, mustard and herbs; reduce by half. Add chops to re-heat.
