CHICKEN MOUSSE

3 cups chicken broth, divided use
2 packages (3 oz. each) Jell-O Lemon Gelatin
1 teaspoon salt
1/8 teaspoon ground cayenne pepper
3 tablespoons vinegar
1 1/3 cups prepared Dream Whip Whipped Topping Mix (or whipped cream)
2/3 cup mayonnaise
2 cups finely diced cooked chicken
2 cups finely chopped celery
2 tablespoons chopped pimiento

Bring 2 cups broth to a boil; dissolve gelatin and salt in boiling broth. Add cayenne, vinegar, and remaining 1 cup broth. Chill until slightly thickened.

Mix whipped topping with mayonnaise, chicken, celery, and pimiento. Chill.

Blend chilled chicken mixture into slightly thickened gelatin. Spoon into 9x5-inch loaf pan. Chill until firm.

TO SERVE:
Unmold; slice and garnish as desired.

Makes 8 to 10 servings
