BANANA BARS WITH ORANGE BUTTER FROSTING4 eggs, beaten cups
2 mashed ripe banana (about 4 large bananas)
1 2/3 cups sugar
3/4 cup cooking oil
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
Orange-Butter Frosting (recipe follows)
Heat oven to 350 degrees F
Stir together eggs, banana, sugar, and oil in a large mixing bowl; set aside.
Stir together flour, baking powder, cinnamon, baking soda, and salt in a medium bowl. Add flour mixture to banana mixture; stir till combined. Spread batter evenly in an ungreased 15x10x1-inch baking pan.
Bake for 20 to 25 minutes or till a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.
Spread with Orange-Butter Frosting; let stand at least 30 minutes or till frosting is set. Cut into bars.
ORANGE-BUTTER FROSTINGMakes 1 2/3 cup
1/4 cup softened butter (no substitutes)
3 1/4 cups sifted powdered sugar
1/4 cup orange juice
Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Alternately add powdered sugar and orange juice, beating till smooth after each addition.
TO STORE:
Cover frosted bars, and store in refrigerator up to 1 week.
Makes 40 bars
