SWEET POTATO COOKIES
3/4 cup butter or margarine, softened 3/4 cup brown sugar 1/2 cup sugar 1 egg 1 cup cooked and mashed sweet potato (cooled) 1 1/2 cups flour 3/4 cup quick cooking oatmeal, uncooked 1 tsp. baking powder 1/2 tsp. ground nutmeg 1/4 tsp. ground cinnamon 1 cup pecans, chopped 1 cup raisins
Mix butter and sugars together. Add egg and sweet potato. Stir in dry ingredients and then pecans and raisins. Drop by teaspoons onto lightly greased baking sheets.
Bake at 350 degrees F for 10 to 12 minutes.
