COUNTRY APPLE CAKE

4 large apples peeled, cored, and chopped
1 cup sugar
1 cup chopped nuts
2/3 cup melted butter
2 eggs, beaten
2 teaspoons vanilla
2 cups sifted flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 teaspoons allspice
1/2 teaspoon salt

Preheat oven to 350 degrees F. Grease two 8- or 9-inch square cake pans.

Combine apples, sugar, nuts, and butter in large bowl. Stir in eggs and vanilla. Set aside.

Sift together dry ingredients and add to apple mixture, stirring only until blended. Divide batter between pans.

Bake 45 to 50 minutes or until tester comes out clean. Cool on cake rack, wrap well, and refrigerate. Serve at room temperature.

Freezes well for up to 3 months.

Makes 2 (9-inch) cakes
