APRICOT 100 HOLE CAKE
1 package (2-layer size) lemon cake mix 1/2 cup sugar 1 cup apricot nectar 3/4 cup oil 4 eggs FOR THE TOPPING: 2 cups powdered sugar 3 tablespoons hot water 3 teaspoons grated lemon peel
Preheat oven to 325 degrees F. Grease and flour a tube pan.
Combine mix, sugar, apricot nectar, oil and eggs. Beat until smooth. Spread in prepared pan.
Bake 1 hour at 325 degrees F. Let cool slightly in pan and then turn out on plate.
Punch 100 holes in top of cake with fork.
Mix powdered sugar, hot water and lemon peel and pour over cake while it is still warm. Serve.
