ZIPPER PEAS
2 1/2 lbs zipper peas 4 cups chicken stock or broth 4 cups water 2 to 3 slices smoked ham 2 minced garlic cloves pepper (to taste)
Place all ingredients in a crock pot. Cover and cook on low in the crockpot overnight. I add very little salt because of the ham, but sometimes I do have to add some sea salt.
I serve this with cornbread or over rice.
I have made it as a gift for family, friends, and neighbors, and they have all loved it! I have Korean neighbors across the street and Indian Neighbors next door, and they have all said that's one of their favorite holiday dishes now! |
