First given to me by my MIL when George & I were married 36 yrs. ago. This is one of those sweet & creamy dellghts that can be served as a salad or dessert. It is expected to be on every holiday menu, served in your prettiest glass bowl.

THAT PINK SALAD

1 (20 oz.) can crushed pineapple (do not drain)
1/2 cup sugar
2 envelopes knox (unflavored) gelatin
1/4 cup cold water
2 tbsp. fresh lemon juice
2 tbsp. diced red marischino cherries
12 red marischino cherries, halved
1 (8 oz.) pkg. cream cheese, softened
1 cup heavy (whipping) cream

In a medium saucepan, heat pineapple with it's juice and sugar until it comes to a simmer.

In a small bowl dissolve gelatin in the cold water; stir into the hot pineapple mixture until gelatin is dissolved. Add lemon juice, diced and halved cherries, and softened cream cheese. Stir until smooth. Refrigerate until slightly thickened.

Whip the cream and fold it into the gelatin mixture. Pour into a pretty serving bowl refrigerate several hours or overnight.
