VANILLA RICE PUDDING
4 cups milk 1 egg, well beaten 1 (4-serving size) package Jell-O Vanilla Flavor Cook and Serve Pudding and Pie Filling mix 1 cup Minute Original Rice, uncooked 1/4 cup raisins (optional) Ground cinnamon (optional, for serving) Ground nutmeg (optional, for serving)
Gradually stir milk and egg into pudding mix in large saucepan. Stir in rice and raisins, if using. Cook and stir on medium heat until mixture just comes to boil. Cool 5 minutes, stirring twice.
Pour into individual dessert dishes or serving bowl.
Serve warm or refrigerate, if desired. (Place plastic wrap on surface of pudding while cooling.) Sprinkle with cinnamon and nutmeg just before serving.
VARIATION:
DOUBLE CHOCOLATE RICE PUDDING: Prepare as directed above, using chocolate flavor pudding mix. Stir in 2 squares (1 ounce each) Baker’s Semi-Sweet Chocolate, chopped, with rice. Omit raisins, cinnamon and nutmeg.
APPLESAUCE RICE PUDDING: Prepare as directed above, using 3 cups milk. Stir in 1 1/2 cups chunky applesauce and 1/2 teaspoon ground cinnamon with rice. Omit raisins and nutmeg.
PUMPKIN RICE PUDDING: Prepare as directed above, using 3 cups milk. Stir in 1 (16 ounces) can pumpkin, 1/3 cup firmly packed brown sugar, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground ginger with rice. Omit raisins and nutmeg.
